Burgundy is one of the world’s most historic and precisely defined wine regions, with vine cultivation dating back to Roman times along the slopes of what would later become the Côte d’Or. Over centuries,monks and winemakers patiently observed soils, exposures, and microclimates, laying the foundations of the Burgundian concept of terroir, where each vineyard parcel expresses a unique identity.Pinot Noir and Chardonnay stand at the heart of Burgundy’s identity. Pinot Noir finds some of its most profound and elegant expressions here, while Chardonnay reaches exceptional levels of finesse and complexity. Aligoté, Burgundy’s historic white grape, offers fresher, more vibrant wines and remains an essential part of the region’s heritage.
Burgundy is structured around an extraordinary mosaic of 84 Appellations d’Origine Contrôlée, including 33 Grands Crus and 588 Premiers Crus, reflecting the region’s unparalleled vineyard fragmentation and precision. The Côte de Nuits is widely regarded as the kingdom of Pinot Noir, producing some of the world’s most celebrated red wines, while the Côte de Beaune is the kingdom of Chardonnay, renowned for its great white wines and refined reds. Further south,the Côte Chalonnaise offers expressive, accessible wines, and Chablis, shaped by its cool climate and Kimmeridgian limestone soils, produces some of the purest and most mineral expressions of Chardonnay.
Together, these vineyards form a region where history, geology, and human craftsmanship combine to create one of the most compelling wine landscapes in the world.

Three Paths to Discovery
The Côtes of Bourgogne

Côte de Beaune, Côte de Nuits, Côte Chalonnaise… each deserves at least one full day to begin to understand its character. With this offer, we propose a one-day journey focused on a single sub-region.
In total, three winery visits are planned, with around 20 to 25 wines tasted throughout the day. The visits reflect different approaches to winemaking, ranging from a small independent vigneron to a larger, internationally recognised estate, and concluding with a natural or biodynamic perspective. With a focus on premier cru and grand cru wines, the wineries visited can be discussed together.
We always bring older vintages, from the 1960s to the present day, allowing you to explore how these wines evolve over time.
Lunch arrangements are discussed together in advance, according to your preferences and the flow of the day.
Departure can be arranged from Beaune, Dijon, Lyon, Paris, Beaujolais, or elsewhere. This is discussed together, and a stay of several days is possible.
Overall, you can expect a leisurely day lasting around 8 to 9 hours, leaving ample time for good wines, thoughtful exchanges, and a relaxed pace.
Bourgogne, Journey from the 40s

There are wines you remember for a lifetime: a Saint-Aubin 1er cru “En Remilly” blanc 1992, a Bourgogne rouge 1985, a Chassagne-Montrachet rouge 1943. You don’t experience emotion very often with vintage wines, but when it happens, it can be very intense.
Two winery visits are planned in the morning, including tastings, an explanation of the specificities of the region, and vineyard walks. Around 12 wines will be tasted. The wineries visited can be discussed together.
Lunch and the afternoon then follow with a private masterclass, held either in the salon of a château of the region during winter or in a French garden during summer. We will spend 3 to 4 hours exploring 5 to 8 wines, selected from vintage Bourgogne wines ranging from the 1940s to the present day.
Pairings are simple and seasonal: seafood and barbecue, cheeses, fruits, local specialties, and desserts.
The day trip lasts around 9 hours, with approximately 1 hour and 30 minutes of total travel time.

Burgundy, Close to nature

We like lively wines, and so do you.
This is a day for fans of natural wines and biodynamic wines, close to the land, free and inventive winemaking styles with flavors that are always disruptive.
A day to direct meeting of 3 winemakers according to different winemaking techniques such as bio, biodynamics or natural.
Visits to small wineries with immersions in the vines and explanations of non-interventionist viticulture, visits of the wineries with explanations of sulphury-free vinification, barrel tastings.
In all, around 20 wines will be tasted during the day.
We'll discuss your choice of lunch together to find out what suits you best between different restaurants.
